This recipe makes 6-8 scones.

HOW TO MAKE IT
1. Heat the oven to
220°C/425°F/Gas 7. Sieve
the flour and baking powder
into the mixing bowl and add
the butter.

2. With the table knife,‘cut’
the butter into the flour. Rub
the butter in with your
fingertips until the mixture
looks like breadcrumbs.

3. Add the herbs and the
cheese and mix. Make a ‘well’ in
the centre of the mixture.

4. Pour the egg and milk
mixture into the ‘well’. With
a tablespoon, mix to a soft,
but not sticky, dough.

5. Put the dough on a lightly
floured work surface. With the
flat of your hand, press the
dough to an even 3cm thickness.

6. Stamp the scones out
with the cutter and place
them slightly apart on the
greased tray.
